Some side dishes politely take up space on a plate. These potatoes refuse to be ignored. Boil small potatoes until tender, flatten them just enough to make rugged edges, then roast until those edges crisp. A shake of Dick’s Side Hustle, with garlic, dill, paprika, parsley, and mild pepper warmth, does most of the flavor work.
The bonus? This recipe is a natural collaboration between Dick’s Rubs and the Masters Potatoes stocked through Legacy Acres when in season.
Recipe at a glance
- Serves: 4–6
- Prep: 10 minutes
- Cook: 35–45 minutes, including boiling
- Featured rub: Dick’s Side Hustle
- Farm pairing: Masters Potatoes from Legacy Acres
Ingredients
- 2 pounds small potatoes, or larger potatoes cut into similarly sized chunks
- 3 tablespoons olive oil or neutral oil
- 2 teaspoons Dick’s Side Hustle seasoning, divided
- 2 tablespoons melted butter, optional
- 2 tablespoons chopped fresh parsley or chives, optional
- Lemon wedges or sour cream for serving
Method
- Heat the oven. Preheat to 450°F. Line a large sheet pan with parchment rated for that temperature or lightly oil the pan.
- Boil the potatoes. Place scrubbed potatoes in a pot, cover with water, and simmer until a fork slides easily into the center, usually about 15–20 minutes depending on size. Drain thoroughly and let steam dry for a few minutes.
- Smash. Arrange the potatoes on the prepared pan, leaving space between them. Press each with the bottom of a sturdy glass or potato masher until about 1/2-inch thick. You want cracks and jagged edges, not mashed-potato pancakes.
- Season. Brush or drizzle with oil. Sprinkle with about half the Side Hustle seasoning, then roast 20–25 minutes until the edges are brown and crisp.
- Finish. Turn a few carefully if you want both sides crunchy. Add the remaining Side Hustle a little at a time, taste, and finish with butter or fresh herbs if desired.
Which potato variety works best?
Waxy or all-purpose varieties tend to hold together beautifully when smashed. Masters’ Chieftain and Superior potatoes can work well for this kind of recipe; russets are more floury and can break apart, but their ragged edges still crisp nicely. Use what is available, just adjust boiling time for size and texture.
Oven or grill?
The oven is easiest for a crowd. For a grill version, start with boiled, smashed potatoes on a sturdy, lightly oiled grill-safe tray over indirect heat. Close the lid to heat them through, then move the tray briefly toward direct heat for color. Avoid trying to balance loose smashed potatoes directly on a widely spaced grate.
The dip situation
Mix 1/2 cup sour cream with 2 tablespoons mayonnaise, lemon juice to taste, and a small pinch of Side Hustle for a quick dipping sauce. The rub includes salt, so taste before adding extra.
These are terrific beside Hot Rod wings, Hard Maple pork, or a Prime Cut steak. They are also excellent standing alone in the kitchen while everyone pretends not to eat them off the tray.
